East African Meatballs

1/3 lb ground lamb

2/3 lb ground beef

¼ c bread crumbs

1 egg, lightly beaten

3 scallions, chopped

1 jar Mama Kicks Berbere Sauce

Fresh cilantro for garnish

 

Combine meat, bread crumbs, egg, scallions and 1/3 jar of the Mama Kicks Berbere Sauce.

Form mixture into one-inch balls and place on a baking sheet lined with parchment, leaving space between.

Bake at 350 until cooked through, about 20 minutes.

Transfer to a bowl and toss generously in remaining Mama Kicks Berbere Sauce. 

Garnish with cilantro.

Serve as an appetizer or with basmati rice for a meal.

Grilled Chimichurri Chicken & Slaw Sandwiches

4 boneless, skinless chicken thighs

½ bag carrot and cabbage slaw

¼ jar of Mama Kicks Chimichurri Sauce

4 Challah buns

1 ripe avocado

 

Brush chicken thighs with Mama Kicks Chimichurri Sauce.

Grill or bake chicken until fully cooked.

Mix slaw with Mama Kicks Chimichurri Sauce

Toast Challah buns.

Assemble sandwiches: spread ¼ avocado on bottom bun and salt to taste, place chicken on avocado, top with slaw, add top bun. Serve with any leftover slaw on the side.

Chimichurri Caprese Stack

Medium vine-ripened tomato, thickly sliced

Fresh burrata cheese

Mama Kicks Chimichurri Sauce

Sea salt & freshly ground black pepper

Flat leaf parsley for garnish (optional)

 

Assemble by layering a tomato slice as the base, sprinkle with sea salt and freshly ground pepper, spread burrata onto the tomato, then drizzle generously with Mama Kicks Chimichurri Sauce. 

 

Continue building the stack with remaining tomato slices by layering the ingredients in the same order, finishing with the Chimichurri Sauce. 

 

Garnish with a sprig of flat leaf parsley. Allot one tomato per person.

Berbere Bliss Breakfast Potatoes

¼ cup olive oil

2 lbs baby red bliss potatoes, halved

1 each red & yellow bell peppers

1 Medium yellow onion

1 jar Mama Kicks Berbere Sauce

Salt & Pepper

 

Lightly coat potatoes in olive oil, saving a few tablespoons, and roast at 400 degrees for 30 minutes, stirring half-way through.

Sauté onions and bell peppers in remaining olive oil until caramelized.

Add potatoes to the sauté pan and stir in Mama Kicks Berbere Sauce until warmed.

Season to taste with salt and pepper.
