Grilled Chimichurri Chicken & Slaw Sandwiches

4 boneless, skinless chicken thighs

½ bag carrot and cabbage slaw

¼ jar of Mama Kicks Chimichurri Sauce

4 Challah buns

1 ripe avocado

 

Brush chicken thighs with Mama Kicks Chimichurri Sauce.

Grill or bake chicken until fully cooked.

Mix slaw with Mama Kicks Chimichurri Sauce

Toast Challah buns.

Assemble sandwiches: spread ¼ avocado on bottom bun and salt to taste, place chicken on avocado, top with slaw, add top bun. Serve with any leftover slaw on the side.
